Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine the grated zucchini, eggs, sugar, and oil. Mix well.
  3. In another bowl, whisk together the flour, baking soda, baking powder, cinnamon, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.

  6. Bake for 65-75 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow to cool before slicing and serving.
