  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 can (20 oz) sliced pineapple, drained
  • 1/2 cup brown sugar
  • 1/2 cup maraschino cherries

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a baking sheet.
  2. In a large bowl, cream together the butter and granulated sugar until smooth.
  3. Add the eggs one at a time, mixing well after each addition.
  4. In another bowl, whisk together the flour, baking powder, and salt. Gradually add this to the butter mixture.
  5. Drop spoonfuls of dough onto the prepared baking sheet.
  6. Place a slice of pineapple on each cookie, and sprinkle with brown sugar and a cherry.
  7. Bake for 12-15 minutes or until golden brown.
