  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup crushed pineapple, drained
  • 1/2 cup brown sugar
  • 1/2 cup maraschino cherries

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the butter and granulated sugar until light and fluffy.
  3. Add the eggs one at a time, then stir in the vanilla.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the creamed mixture, mixing until just combined.
  6. Fold in the crushed pineapple.
  7. Drop spoonfuls of the dough onto a baking sheet lined with parchment paper.
  8. Sprinkle brown sugar over each cookie and top with a maraschino cherry.
