  • 2 pounds beef chuck, cut into 1-inch pieces
  • 1 tablespoon vegetable oil
  • 4 cups beef broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 medium carrots, sliced
  • 3 medium potatoes, diced
  • 1 cup frozen peas
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 2 cloves garlic, minced

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the beef and cook until browned on all sides.
  2. Add the garlic and cook for 1 minute.
  3. Stir in the beef broth, salt, pepper, Worcestershire sauce, and thyme. Bring to a boil.
  4. Reduce heat, cover, and let simmer for about 1.5 hours.
  5. Add the carrots and potatoes, and continue to simmer for another 30 minutes.
  6. Stir in the peas and cook for an additional 5 minutes before serving.

Notes

  • For a thicker stew, mix 1 tablespoon of cornstarch with cold water and stir into the stew during the last few minutes of cooking.
  • Serve with crusty bread for a full meal.
