  • 1 teaspoon salt
  • 1 teaspoon instant yeast
  • 1 1/2 cups warm water
  • 1 cup raisins
  • 1 tablespoon ground cinnamon
  • 2 tablespoons sugar

Instructions

  1. In a large bowl, mix flour, salt, and yeast.
  2. Add warm water, raisins, cinnamon, and sugar. Stir until combined.
  3. Cover the bowl with plastic wrap and let it sit for 12-18 hours at room temperature.
  4. Preheat the oven to 450°F (230°C).
  5. Place a Dutch oven in the oven to heat up for 30 minutes.
  6. Dust a work surface with flour and turn the dough out onto it. Form it into a ball.
  7. Transfer the dough to a piece of parchment paper and let it rest while the oven preheats.
  8. Carefully remove the Dutch oven, remove the lid, and lift the parchment with the dough into it.
  9. Cover and bake for 30 minutes, then uncover and bake for an additional 15 minutes until golden brown.
  10. Remove from the oven and let it cool on a wire rack.

Notes

  • For a sweeter bread, increase the sugar to 3 tablespoons.
  • You can add nuts for extra texture.
