- 3 cups all-purpose flour
- 1 teaspoon salt
- 1 teaspoon instant yeast
- 1 1/2 cups warm water
- 1 cup raisins
- 1 tablespoon ground cinnamon
- 2 tablespoons sugar
- In a large bowl, mix flour, salt, and yeast.
- Add warm water, raisins, cinnamon, and sugar. Stir until combined.
- Cover the bowl with plastic wrap and let it sit for 12-18 hours at room temperature.
- Preheat the oven to 450°F (230°C).
- Place a Dutch oven in the oven to heat up for 30 minutes.
- Dust a work surface with flour and turn the dough out onto it. Form it into a ball.
- Transfer the dough to a piece of parchment paper and let it rest while the oven preheats.
- Carefully remove the Dutch oven, remove the lid, and lift the parchment with the dough into it.
- Cover and bake for 30 minutes, then uncover and bake for an additional 15 minutes until golden brown.
- Remove from the oven and let it cool on a wire rack.
Notes
- For a sweeter bread, increase the sugar to 3 tablespoons.
- You can add nuts for extra texture.
