1 cup pumpkin puree
1/2 cup vegetable oil
1 cup sugar
2 eggs
1 teaspoon vanilla extract
1 3/4 cups all-purpose flour
1/2 cup unsweetened cocoa powder
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/2 cup chocolate chips
Instructions
Preheat oven to 350°F (175°C).
In a large bowl, mix pumpkin puree, oil, sugar, eggs, and vanilla until smooth.
In another bowl, whisk together the flour, cocoa powder, baking soda, baking powder, salt, cinnamon, and nutmeg.
Gradually add the dry ingredients to the wet mixture, stirring just until combined.
Fold in chocolate chips.
Pour the batter into a greased loaf pan.
Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
Let it cool before slicing.
Notes
For an extra chocolatey treat, add more chocolate chips to the top before baking.
This bread can also be made as muffins; reduce baking time to 20-25 minutes.
