Delicious Mediterranean quesadillas filled with spinach, feta, mozzarella, and red onion for a delightful flavor experience.

Ingredients

  • 2 cups fresh spinach
  • 1 cup crumbled feta cheese
  • 1 cup shredded mozzarella cheese
  • 1 red onion, sliced
  • 4 flour tortillas
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a skillet over medium heat.
  2. Add the sliced red onion and sauté until translucent.
  3. Add the spinach and cook until wilted.
  4. Layer the spinach and onion mixture on one half of each tortilla.
  5. Sprinkle feta and mozzarella over the spinach.
  6. Fold the tortillas and cook in the skillet until golden brown on each side.
  7. Remove from heat, slice, and serve.
