Indulge in the rich flavors of the Mediterranean with these easy spinach, feta, and mozzarella quesadillas. Perfect for a quick meal!

Ingredients

  • 2 cups fresh spinach
  • 1 cup feta cheese, crumbled
  • 1 cup mozzarella cheese, shredded
  • 1 red onion, thinly sliced
  • 4 large tortillas
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add red onion and sauté until soft.
  3. Add spinach and cook until wilted.
  4. Sprinkle garlic powder and season with salt and pepper.
  5. Place a tortilla in the skillet, and layer half with spinach mixture and both cheeses.
  6. Fold the tortilla in half, cook until golden brown, then flip and cook the other side.
  7. Repeat with remaining tortillas.
  8. Slice and serve warm.

Notes

  • For extra flavor, add sun-dried tomatoes or olives to the filling.
  • Serve with tzatziki or your favorite dipping sauce.
