  • 1 pound red beans
  • 6 ounces turkey bacon
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 green bell pepper, chopped
  • 2 stalks celery, chopped
  • 4 cups chicken broth
  • 1 teaspoon cayenne pepper
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 2 cups cooked rice

Instructions

  1. Rinse the red beans and soak them overnight.
  2. In a large pot, cook the turkey bacon until crispy, then remove and set aside.
  3. In the same pot, sauté the onion, garlic, bell pepper, and celery until soft.
  4. Add the soaked beans, chicken broth, cayenne, paprika, and thyme to the pot.
  5. Bring to a boil, then reduce heat and simmer for about 1.5 to 2 hours until beans are tender.
  6. Stir in the cooked rice and crispy turkey bacon before serving.
