1 cup unsalted butter
3/4 cup granulated sugar
1 cup ground almonds
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
1/2 teaspoon salt
1 cup raspberry jam
Instructions
Preheat your oven to 350°F (175°C).
In a mixing bowl, cream together the butter and sugar until light and fluffy.
Add the vanilla extract and ground almonds, mixing well.
Gradually add the flour, cinnamon, and salt, mixing until combined.
Chill the dough for 30 minutes.
Roll out the dough and cut into desired shapes.
Cut a small hole in half of the cookies for filling.
Bake for 12-15 minutes or until golden.
Let cool, then fill the cookies with raspberry jam and sandwich together.
Notes
For a different flavor, substitute raspberry jam with apricot or strawberry.
