A deliciously creamy potato soup loaded with cheddar cheese and turkey bacon, enhanced with garlic and herbs for a hearty flavor.

Ingredients

  • 4 cups diced potatoes
  • 1 cup shredded cheddar cheese
  • 4 slices turkey bacon
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • salt to taste
  • black pepper to taste

Instructions

  1. In a large pot, cook turkey bacon until crispy. Remove and set aside.
  2. In the same pot, add onions and garlic, sautéing until onions are translucent.
  3. Add diced potatoes and chicken broth, bring to a boil, then reduce heat and simmer until potatoes are soft.
  4. Use an immersion blender to puree the soup until smooth (or leave some chunks for texture).
  5. Stir in heavy cream, cheddar cheese, thyme, oregano, salt, and pepper. Cook on low until cheese is melted.
  6. Crumble the cooked turkey bacon and stir into the soup before serving.

Notes

  • For added flavor, you can garnish with extra shredded cheese and chives.
