A delightful recipe for crispy Hasselback Potatoes topped with savory turkey bacon.

Ingredients

  • 4 medium-sized russet potatoes
  • 4 slices turkey bacon
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Wash and scrub the potatoes, then make slices across the potatoes, stopping before you cut all the way through.
  3. Brush the potatoes with olive oil and sprinkle with garlic powder, paprika, salt, and pepper.
  4. Insert turkey bacon slices between the cuts of the potatoes.
  5. Bake for 45-50 minutes or until crispy, basting with olive oil halfway through.
  6. Sprinkle with Parmesan cheese in the last 5 minutes of baking.
  7. Remove from the oven and let cool slightly before serving.
