A delicious and hearty casserole combining the flavors of French onion soup with tender chicken and orzo pasta.

  • 2 cups cooked chicken, shredded
  • 1 large onion, thinly sliced
  • 2 cups beef broth
  • 1 cup shredded Gruyère cheese
  • 1 tablespoon olive oil
  • 1 teaspoon thyme
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, heat olive oil over medium heat. Add sliced onion and sauté until caramelized, about 15 minutes.
  3. In a large bowl, combine orzo, shredded chicken, caramelized onions, beef broth, thyme, garlic powder, salt, and pepper.
  4. Transfer the mixture to a greased baking dish and top with shredded Gruyère cheese.
  5. Bake for 25-30 minutes, or until the cheese is bubbly and golden.

Notes

  • For extra flavor, add a splash of white wine to the caramelized onions.
  • This dish can be made ahead of time and refrigerated before baking.
