  • 4 large bell peppers
  • 1 cup cooked rice
  • 1 can black beans, drained and rinsed
  • 1 cup corn
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 cup diced tomatoes
  • 1/2 cup shredded cheese (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a bowl, mix the cooked rice, black beans, corn, cumin, chili powder, and diced tomatoes.
  4. Stuff the mixture into each bell pepper.
  5. Place the stuffed peppers in a baking dish and cover with foil.
  6. Bake for 30 minutes, then remove the foil and add cheese, if using.
  7. Bake for an additional 10 minutes until the peppers are tender.

Notes

  • You can add other vegetables like zucchini or spinach to the filling for extra nutrition.
  • Serve with a side salad for a complete meal.
