  • 2 cups cooked jasmine rice
  • 1 pound shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 2 cups mixed greens
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 1 avocado, sliced
  • 1/4 cup fresh cilantro, chopped
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a skillet over medium heat.
  2. Add the cooked rice and press it into an even layer. Cook until crispy, about 5-7 minutes.
  3. In a separate pan, season the shrimp with lime juice, chili powder, salt, and pepper. Cook until pink and cooked through, about 3-4 minutes.
  4. In a large bowl, combine mixed greens, cherry tomatoes, red onion, avocado, and cilantro.
  5. Top the salad with the shrimp and serve over the crispy rice.
