- 1 tablespoon unsalted butter
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 pound mushrooms, sliced
- 4 cups vegetable or chicken broth
- 1 cup heavy cream
- 2 teaspoons thyme, fresh or dried
- Salt and pepper to taste
- Heat olive oil and butter in a large pot over medium heat.
- Add the diced onion and minced garlic, cooking until the onion is translucent.
- Add the sliced mushrooms and cook until they release their moisture and begin to brown.
- Pour in the broth and bring to a simmer.
- Add thyme, salt, and pepper, then let it cook for 15 minutes.
