  • 1 tablespoon unsalted butter
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 pound mushrooms, sliced
  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream
  • 2 teaspoons thyme, fresh or dried
  • Salt and pepper to taste

Instructions

  1. Heat olive oil and butter in a large pot over medium heat.
  2. Add the diced onion and minced garlic, cooking until the onion is translucent.
  3. Add the sliced mushrooms and cook until they release their moisture and begin to brown.
  4. Pour in the broth and bring to a simmer.
  5. Add thyme, salt, and pepper, then let it cook for 15 minutes.
  6. Stir in the heavy cream and let simmer for an additional 5 minutes before serving.

Notes

  • For a thicker soup, blend a portion with an immersion blender.
  • This soup can be made ahead of time and stored in the refrigerator for up to 3 days.
