  • 1/2 cup unsweetened shredded coconut

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, cream the butter and sugar together.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the coconut milk and vanilla extract.
  5. In another bowl, mix the flour, shredded coconut, and baking powder.
  6. Gradually add the dry ingredients to the wet ingredients until just combined.

  9. For the lime buttercream, beat softened butter and gradually add powdered sugar, lime juice, and zest to taste.
