An indulgent Chocolate Raspberry Mousse Cake that will satisfy any sweet tooth.

Ingredients

  • 1 cup dark chocolate, chopped
  • 2 cups fresh raspberries
  • 1/2 cup granulated sugar
  • 3 large eggs
  • 1/2 cup heavy cream
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 2 tbsp unsalted butter

Instructions

  1. Melt the dark chocolate and butter together in a heatproof bowl over simmering water, stirring until smooth.
  2. In a separate bowl, whisk together the eggs and sugar until frothy.
  3. Fold the melted chocolate into the egg mixture.
  4. In another bowl, whip the cream until soft peaks form, then fold into the chocolate mixture.
  5. Gently fold in the raspberries.
  6. Pour the mousse into a cake pan and refrigerate for at least 4 hours.
  7. Once set, serve with additional raspberries on top.

Notes

  • Feel free to use frozen raspberries if fresh ones are unavailable.
  • For a sweeter mousse, adjust the sugar to taste.
