Ingredients

  • 1/2 cup grated carrots
  • 1/4 cup almond butter
  • 1/4 cup honey
  • 1 teaspoon cinnamon
  • 1/4 cup shredded coconut
  • 1/4 cup chopped walnuts

Instructions

  1. In a large bowl, mix together the oats, grated carrots, almond butter, honey, and cinnamon until well combined.
  2. Add in the shredded coconut and chopped walnuts, and stir until evenly distributed.
  3. Using your hands, form the mixture into balls, about 1 inch in diameter.
  4. Place the energy balls on a baking sheet and refrigerate for at least 30 minutes to firm up.
  5. Once chilled, enjoy your healthy snacks!
