  • 4 slices turkey bacon
  • 1/4 cup olive oil
  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon garlic powder
  • Salt to taste
  • Pepper to taste
  • 1/4 cup chopped fresh parsley

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Wash and halve the baby potatoes, then toss them in olive oil, garlic powder, salt, and pepper.
  3. Spread the potatoes on a baking sheet and roast for 25-30 minutes until golden and crispy.
  4. Meanwhile, cook the turkey bacon in a skillet until crispy, then chop it into pieces.
  5. In a large bowl, whisk together Dijon mustard and apple cider vinegar.
