A delicious twist on traditional deviled eggs, incorporating creamy avocado and crispy turkey bacon for a healthy appetizer.

Ingredients

  • 6 large eggs
  • 1 ripe avocado
  • 2 slices turkey bacon
  • 1 tablespoon mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon lime juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons chopped fresh chives

Instructions

  1. Hard boil the eggs by placing them in a pot of water and bringing it to a boil. Once boiling, cover and let sit for 12 minutes.
  2. While the eggs are cooking, cook the turkey bacon in a skillet until crispy. Remove and chop into small pieces.
  3. Once the eggs are done, cool them in ice water, then peel and slice them in half lengthwise.
  4. Remove the yolks and place them in a mixing bowl. Mash the yolks with avocado, mayonnaise, Dijon mustard, lime juice, salt, and pepper until smooth.
  5. Stir in chopped chives and half of the turkey bacon pieces.
  6. Fill the egg whites with the avocado mixture and top with remaining turkey bacon.

Notes

  • For a spicier kick, add some diced jalapeños to the mixture.
  • These can be stored in the fridge for up to 2 days.
