  • 8 slices turkey bacon
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 pound potatoes, diced
  • 1 cup kale, chopped
  • 1 teaspoon crushed red pepper flakes
  • 1 cup heavy cream
  • 1 cup shredded cheese

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and set aside.
  2. Add onions and garlic to the pot, cooking until translucent.
  3. Pour in the chicken broth and add in the potatoes. Bring to a boil.
  4. Reduce heat and simmer until potatoes are tender.
  5. Stir in kale, bacon, and crushed red pepper flakes.
  6. Mix in heavy cream and cheese, stirring until melted.
  7. Serve hot.
