- 1 pound boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 cup onion, diced
- 3 cloves garlic, minced
- 2 cans white beans, drained and rinsed
- 1 can diced green chilies
- 4 cups chicken broth
- 1 teaspoon cumin
- 1 teaspoon oregano
- Salt and pepper to taste
- 1 cup corn, frozen or fresh
- 1/2 cup heavy cream
- In a large pot, heat the olive oil over medium heat.
- Add the diced onion and garlic, and sauté until softened.
- Add the chicken breasts, cooking until browned on all sides.
- Stir in the beans, diced green chilies, chicken broth, cumin, oregano, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Remove the chicken, shred it, and return it to the pot.
- Stir in the corn and heavy cream, and heat through.
- Serve warm, garnished with fresh cilantro if desired.
Notes
- For a spicier chili, add some jalapeños or cayenne pepper.
- This chili can be made a day ahead for better flavor.
