White Chicken Chili

A delicious and comforting dish that warms you up on cold days.

Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 cup onion, diced
  • 3 cloves garlic, minced
  • 2 cans white beans, drained and rinsed
  • 1 can diced green chilies
  • 4 cups chicken broth
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • Salt and pepper to taste
  • 1 cup corn, frozen or fresh
  • 1/2 cup heavy cream

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the diced onion and garlic, and sauté until softened.
  3. Add the chicken breasts, cooking until browned on all sides.
  4. Stir in the beans, diced green chilies, chicken broth, cumin, oregano, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for 20 minutes.
  6. Remove the chicken, shred it, and return it to the pot.
  7. Stir in the corn and heavy cream, and heat through.
  8. Serve warm, garnished with fresh cilantro if desired.

Notes

  • For a spicier chili, add some jalapeños or cayenne pepper.
  • This chili can be made a day ahead for better flavor.
