A delicious and healthy quinoa casserole loaded with veggies, perfect for a family dinner.

Ingredients

  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 cup chopped bell peppers
  • 1 cup chopped zucchini
  • 1 cup chopped spinach
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn, fresh or frozen
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 cup shredded cheese (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large pot, combine quinoa and vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes or until quinoa is fluffy.
  3. In a large mixing bowl, combine cooked quinoa with bell peppers, zucchini, spinach, black beans, corn, cumin, and chili powder.
  4. Transfer the mixture to a casserole dish and top with shredded cheese if desired.
  5. Bake in the preheated oven for 25-30 minutes, until heated through and cheese is melted.
  6. Let cool for a few minutes before serving.

Notes

  • This casserole can be made ahead of time and stored in the refrigerator for up to 3 days.
  • Feel free to add any of your favorite vegetables.
