1 cup flour
1/2 cup sugar
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/2 cup almond milk
1/4 cup vegetable oil
1 tsp vanilla extract
1 cup blueberries
Instructions
Preheat your oven to 350°F (175°C).
In a large bowl, mix together the dry ingredients: flour, sugar, baking powder, baking soda, and salt.
In another bowl, whisk together the wet ingredients: almond milk, vegetable oil, and vanilla extract.
Combine the wet and dry ingredients until just mixed, then gently fold in the blueberries.
Pour the batter into a lined muffin tin, filling each cup about 2/3 full.
Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
Let them cool before serving.
Notes
For extra flavor, add a sprinkle of cinnamon to the dry ingredients.
