  • 1/2 cup sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup almond milk
  • 1/4 cup vegetable oil
  • 1 tsp vanilla extract
  • 1 cup blueberries

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix together the dry ingredients: flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the wet ingredients: almond milk, vegetable oil, and vanilla extract.
  4. Combine the wet and dry ingredients until just mixed, then gently fold in the blueberries.
  5. Pour the batter into a lined muffin tin, filling each cup about 2/3 full.
  6. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  7. Let them cool before serving.

Notes

  • For extra flavor, add a sprinkle of cinnamon to the dry ingredients.
