- 1 ½ cups all-purpose flour
- ½ cup unsalted butter, softened
- ¼ cup granulated sugar
- 1 large egg yolk
- 2 cups whole milk
- ½ cup granulated sugar
- 4 large egg yolks
- 2 tablespoons cornstarch
- 1 teaspoon vanilla extract
- 2 cups fresh strawberries, sliced
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine flour, butter, and sugar until crumbly. Add egg yolk and mix until dough forms.
- Press the dough into a tart pan and bake for 15-20 minutes until lightly golden. Allow to cool.
- In a saucepan, heat milk until just simmering. In another bowl, whisk together sugar, egg yolks, and cornstarch.
- Slowly pour the hot milk into the egg mixture while whisking constantly. Return the mixture to the saucepan.
- Cook over medium heat, stirring constantly until it thickens. Remove from heat and stir in vanilla extract.
- Pour the custard into the cooled tart shell and smooth the top. Chill in the refrigerator until set.
- Once set, top with fresh strawberries before serving.
Notes
- For a sweeter tart, increase the sugar in the custard.
- You can use other fruits like blueberries or raspberries as toppings.
