A hearty and comforting Tuscan White Bean Soup featuring savory turkey bacon and chicken ham, perfect for any meal.

Ingredients

  • 1 tablespoon olive oil
  • 4 slices turkey bacon
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 cans (15 ounces) white beans, rinsed and drained
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 cups spinach, roughly chopped
  • 1 tablespoon lemon juice

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the turkey bacon and cook until crispy. Remove and crumble.
  2. Add the onion, carrots, and celery to the pot and sauté until softened, about 5 minutes.
  3. Stir in the garlic and cook for an additional minute.
  4. Pour in the vegetable broth and add the white beans, thyme, rosemary, bay leaf, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for 20 minutes.
  6. Add the spinach and lemon juice, cooking until the spinach wilts.
  7. Remove the bay leaf and serve hot, topped with crumbled turkey bacon.

Notes

  • This soup is great for meal prep and can be stored in the fridge for up to 5 days.
  • Feel free to substitute turkey bacon with regular bacon if preferred.
