- 1 tablespoon olive oil
- 4 slices turkey bacon
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 2 cans (15 ounces) white beans, rinsed and drained
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 bay leaf
- Salt and pepper to taste
- 2 cups spinach, roughly chopped
- 1 tablespoon lemon juice
- In a large pot, heat the olive oil over medium heat. Add the turkey bacon and cook until crispy. Remove and crumble.
- Add the onion, carrots, and celery to the pot and sauté until softened, about 5 minutes.
- Stir in the garlic and cook for an additional minute.
- Pour in the vegetable broth and add the white beans, thyme, rosemary, bay leaf, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Add the spinach and lemon juice, cooking until the spinach wilts.
- Remove the bay leaf and serve hot, topped with crumbled turkey bacon.

- Feel free to substitute turkey bacon with regular bacon if preferred.
