A delightful take on the classic tiramisu, this layer cake combines the rich flavors of coffee and mascarpone cream for a luxurious dessert experience.

Ingredients

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 cup unsweetened cocoa powder
  • 1 cup mascarpone cheese
  • 4 large eggs
  • 1 cup strong brewed coffee
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, mix together the flour, sugar, cocoa powder, baking soda, and salt.
  3. Add the eggs, brewed coffee, vanilla extract, and mix until combined.
  4. Divide the batter evenly between the prepared cake pans.
  5. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  6. Let the cakes cool in the pans for 10 minutes, then turn out onto a wire rack to cool completely.
  7. In another bowl, whip the heavy cream until stiff peaks form. Gently fold in the mascarpone cheese.
  8. Once the cakes are cool, place one layer on a serving plate. Spread a generous amount of the mascarpone mixture over the top.
  9. Place the second layer on top and frost the entire cake with the remaining mascarpone mixture.
  10. Chill the cake in the refrigerator for at least 2 hours before serving.

Notes

  • For added flavor, you can sprinkle some cocoa powder or coffee grounds on top before serving.
  • Serve the cake with a side of whipped cream for an extra indulgent treat.
