  • 2 large sweet potatoes
  • 1 cup quinoa
  • 4 eggs
  • 1 cup spinach
  • 1 avocado
  • 1 teaspoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel and dice the sweet potatoes, then toss with olive oil, salt, and pepper.
  3. Spread the sweet potatoes on a baking sheet and roast for 25-30 minutes.
  4. Cook quinoa according to package instructions.
  5. In a skillet, sauté spinach until wilted, then set aside.
  6. In the same skillet, cook eggs to your liking.
  7. Assemble each bowl with quinoa, roasted sweet potatoes, spinach, and a cooked egg on top.
