- 4 boneless skinless chicken breasts
- 1 cup pineapple chunks
- 1 cup bell peppers, sliced
- 1/2 cup teriyaki sauce
- 1/4 cup soy sauce
- 2 tablespoons brown sugar
- 1 teaspoon garlic minced
- 1 teaspoon ginger minced
- 1 tablespoon cornstarch
- 1 tablespoon water
- Place chicken breasts in the crockpot.
- Add pineapple chunks, bell peppers, teriyaki sauce, soy sauce, brown sugar, garlic, and ginger on top of the chicken.
- Cover and cook on low for 6-8 hours or high for 3-4 hours until chicken is cooked through.
- Remove chicken, shred it, and return to the crockpot.
- Dissolve cornstarch in water and stir into the mixture in the crockpot. Let it thicken for an additional 10 minutes.
- Serve over rice or noodles.
