  • 1 onion diced
  • 4 cloves garlic minced
  • 1 inch ginger grated
  • 6 cups carrots peeled and chopped
  • 4 cups vegetable broth
  • 3 tablespoons miso paste
  • 1 tablespoon soy sauce
  • 1 teaspoon red pepper flakes
  • 1 cup coconut milk
  • 2 tablespoons lime juice
  • 1/4 cup green onions sliced

Instructions

  1. Heat the sesame oil in a large pot over medium heat.
  2. Add the onion, garlic, and ginger. Sauté until the onion is translucent.
  3. Stir in the carrots and cook for about 5 minutes.
  4. Pour in the vegetable broth and bring to a boil.
  5. Reduce heat and simmer until the carrots are tender.
  6. Stir in miso paste, soy sauce, and red pepper flakes.
  7. Blend the soup until smooth, then return to heat.
  8. Stir in coconut milk and lime juice, and heat through.
  9. Serve hot, garnished with green onions.
