- 2 cups cooked rice
- 1 medium pumpkin
- 1 cup diced vegetables (bell peppers, carrots, onions)
- 1 teaspoon garlic powder
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup shredded cheese (optional)
- Preheat your oven to 375°F (190°C).
- Cut the top off the pumpkin and scoop out the seeds.
- In a bowl, mix together the cooked rice, diced vegetables, garlic powder, thyme, salt, and pepper.
- Stuff the pumpkin with the rice mixture and top with shredded cheese if desired.
- Place the pumpkin in a baking dish and add a little water to the bottom.

- Remove the foil for the last 10 minutes to let the cheese brown.
