  • 2 cups cooked rice
  • 1 medium pumpkin
  • 1 cup diced vegetables (bell peppers, carrots, onions)
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup shredded cheese (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the top off the pumpkin and scoop out the seeds.
  3. In a bowl, mix together the cooked rice, diced vegetables, garlic powder, thyme, salt, and pepper.
  4. Stuff the pumpkin with the rice mixture and top with shredded cheese if desired.
  5. Place the pumpkin in a baking dish and add a little water to the bottom.
  6. Cover with foil and bake for 45-60 minutes or until the pumpkin is tender.
  7. Remove the foil for the last 10 minutes to let the cheese brown.
