A warm and comforting roasted garlic potato soup that’s perfect for chilly days.

Ingredients

  • 1 head garlic
  • 2 tablespoons olive oil
  • 4 cups potatoes, peeled and diced
  • 1 onion, chopped
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 teaspoon thyme
  • Salt to taste
  • Pepper to taste

Instructions

  1. Roast the garlic by wrapping it in foil and baking at 400°F for 30-35 minutes.
  2. In a large pot, heat olive oil over medium heat and sauté onions until translucent.
  3. Add the potatoes, vegetable broth, and thyme. Bring to a boil and then simmer until potatoes are tender.
  4. Remove the roasted garlic from its skin and add to the pot. Blend the soup until smooth.
  5. Stir in the heavy cream, salt, and pepper. Heat through before serving.
