- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 3 (8 ounce) packages cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup sour cream
- 1/2 cup brewed espresso, cooled
- 1/4 cup coffee liqueur (optional)
- Preheat oven to 325°F (160°C).
- In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Press into the bottom of a 9-inch springform pan.
- In a large bowl, beat cream cheese with sugar until smooth. Add vanilla and eggs, mixing well after each addition.
- Add sour cream, brewed espresso, and coffee liqueur until fully incorporated.
- Pour the cheesecake mixture over the crust in the springform pan.
- Bake for 55-60 minutes, or until the center is set. Remove from oven and let cool.
- Chill in the refrigerator for at least 4 hours before serving.
