  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 cup pumpkin puree
  • 1/2 cup milk
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 1/4 cup brown sugar
  • 4 slices turkey bacon

Instructions

  1. In a large bowl, mix together the flour, baking powder, salt, cinnamon, and nutmeg.
  2. In another bowl, combine the pumpkin puree, milk, eggs, vanilla extract, and brown sugar.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined.
  4. Heat a non-stick skillet over medium heat and pour 1/4 cup of batter for each pancake.
  5. Cook until bubbles form on the surface, then flip and cook until golden brown.
  6. In a separate pan, cook the turkey bacon until crispy.
  7. Serve the pancakes warm with turkey bacon on the side.
