A hearty and comforting pork stew enriched with the savory flavors of turkey bacon, sweet apples, and decadent prunes.

  • 4 slices turkey bacon
  • 2 pounds pork shoulder, cut into chunks
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 large apples, peeled and diced
  • 1 cup prunes, pitted and halved
  • 2 teaspoons thyme
  • 1 teaspoon rosemary
  • Salt and pepper, to taste

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and set aside.
  2. In the bacon drippings, brown the pork shoulder on all sides.
  3. Add the onion and garlic, cooking until softened.
  4. Pour in the chicken broth, then add the diced apples, prunes, thyme, rosemary, salt, and pepper.
  5. Bring to a boil, then reduce heat and let simmer for 1.5 hours.
  6. Shred the bacon and stir it back into the stew before serving.
