Ingredients

  • 4 medium beets
  • 2 slices turkey bacon
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon olive oil
  • 1 teaspoon honey
  • Salt and pepper to taste
  • 2 cups mixed greens

Instructions

  1. Boil the beets in water until tender, about 30-40 minutes.
  2. While the beets cool, cook the turkey bacon until crispy and chop.
  3. Once cooled, peel and slice the beets.
  4. In a bowl, whisk together apple cider vinegar, olive oil, honey, salt, and pepper.
  5. Toss the sliced beets with the dressing, and add the crispy turkey bacon.
  6. Serve over mixed greens.
