  • 1 teaspoon white vinegar
  • 2 teaspoons cornstarch
  • 1 cup heavy cream
  • 2 cups mixed berries

Instructions

  1. Preheat the oven to 250°F (120°C).
  2. In a clean mixing bowl, beat the egg whites until soft peaks form.
  3. Gradually add the sugar, beating until shiny and stiff peaks form.
  4. Fold in the vanilla extract, vinegar, and cornstarch.
  5. Spoon the mixture onto a parchment-lined baking sheet, shaping it into a round disc with a slight well in the center.
  6. Bake for 1 hour, then turn off the oven and let the pavlova cool inside for another hour.
  7. Whip the heavy cream until soft peaks form and spread it over the cooled pavlova.
  8. Top with mixed berries before serving.

Notes

  • Make sure the mixing bowl is free from grease for the egg whites to whip properly.
  • Let the pavlova cool completely to avoid cracking.
