Ingredients

  • 8 small pumpkins
  • 1 cup pizza sauce
  • 2 cups shredded mozzarella cheese
  • 1 cup sliced pepperoni
  • 1 teaspoon Italian seasoning
  • 1 tablespoon olive oil
  • 1/2 cup sliced black olives
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the pumpkins and scoop out the insides.
  3. Brush the insides with olive oil.
  4. Spread pizza sauce inside each pumpkin.
  5. Add mozzarella cheese and top with pepperoni slices.
  6. Sprinkle Italian seasoning and olives on top.
  7. Bake for 25-30 minutes until pumpkins are tender.
  8. Remove from oven and sprinkle with grated Parmesan before serving.

Notes

  • These are best served fresh, but can be stored in the fridge for 1-2 days.
