  • 1 tablespoon sugar
  • 2 large eggs
  • 1/2 cup milk
  • 1/4 cup chopped green onions
  • Oil for frying

Instructions

  1. In a large bowl, mix together the corn, flour, baking powder, salt, and sugar.
  2. In another bowl, whisk together the eggs and milk.
  3. Add the egg mixture to the dry ingredients and stir until just combined.
  4. Fold in the green onions.
  5. Heat oil in a skillet over medium heat.
  6. Drop spoonfuls of the batter into the hot oil and cook until golden brown, about 3-4 minutes per side.
  7. Remove from oil and drain on paper towels.
