A warm and flavorful Persian noodle soup that brings comfort to any meal.

Ingredients

  • 2 tablespoons olive oil
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 teaspoon turmeric
  • 6 cups vegetable broth
  • 1 cup lentils rinsed
  • 1 cup noodles (your choice)
  • 2 cups spinach chopped
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and garlic, sauté until translucent.
  3. Stir in turmeric and cook for another minute.
  4. Add vegetable broth and lentils, bring to a boil.
  5. Reduce heat and simmer for 20 minutes.
  6. Add noodles and cook until tender.
  7. Stir in spinach and lemon juice, season with salt and pepper.
  8. Serve warm.
