A simple and comforting recipe for rustic seed bread that requires no kneading.

Ingredients

  • 1 ½ teaspoons salt
  • 1 teaspoon instant yeast
  • 1 ½ cups warm water

Instructions

  1. In a large bowl, mix flour, seeds, salt, and yeast.
  2. Add warm water and stir until well combined.
  3. Cover the bowl with plastic wrap and let it sit at room temperature for 12-18 hours.
  4. After the resting period, preheat your oven to 450°F (230°C) with a Dutch oven inside.
  5. Carefully turn the dough onto a floured surface and shape it into a ball.
  6. Let it rest for 30 minutes while the oven heats up.
  7. Once hot, place the dough in the Dutch oven, cover it, and bake for 30 minutes.
  8. Remove the lid and bake for an additional 15-20 minutes until golden brown.
  9. Let it cool on a wire rack before slicing.

Notes

  • For a finer crumb, allow the bread to rest for the full 18 hours.
