2 cups mixed berries (fresh or frozen)
1 ½ cups all-purpose flour
1 cup granulated sugar
½ cup unsalted butter, melted
2 large eggs
1 teaspoon vanilla extract
½ cup milk
2 teaspoons baking powder
½ teaspoon salt
½ cup brown sugar
¼ cup rolled oats
¼ cup all-purpose flour (for streusel)
Instructions
Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
In a large bowl, mix together the flour, sugar, baking powder, and salt.
In another bowl, whisk together the melted butter, eggs, vanilla extract, and milk.
Pour the wet ingredients into the dry ingredients and stir until just combined. Gently fold in the mixed berries.
In a small bowl, combine brown sugar, oats, and ¼ cup flour to create the streusel topping.
Scoop the muffin batter into the prepared muffin tin and sprinkle the streusel on top.
Bake for 20-25 minutes, or until a toothpick comes out clean.
Let cool before serving.
