  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup heavy cream
  • 2 tablespoons brown sugar

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, combine graham cracker crumbs and melted butter.
  3. Press the mixture into the bottoms of mini cheesecake cups.
  4. In a mixing bowl, beat the cream cheese and granulated sugar until smooth.
  5. Add vanilla extract and eggs, one at a time, mixing well after each addition.
  6. Fold in the heavy cream until fully incorporated.
  7. Pour the cheesecake mixture over the crusts in the cups.
  8. Bake for 25-30 minutes or until the edges are firm.
  9. Let them cool and refrigerate for at least four hours.
