1 ½ cups blackberries
2 cups heavy cream
1 cup granulated sugar
1 tablespoon gelatin
½ cup water
1 teaspoon vanilla extract
1 package mini graham cracker crusts
Instructions
In a saucepan, heat blackberries over medium heat until they break down, about 5 minutes. Strain to remove seeds.
In another bowl, whip heavy cream until stiff peaks form. Gradually add sugar and vanilla extract.
In a small bowl, dissolve gelatin in warm water.
Fold the blackberry puree into the whipped cream, then add the gelatin mixture.
Fill mini graham cracker crusts with the mousse mixture.
Refrigerate for at least 4 hours or until set.
Garnish with fresh blackberries before serving.
