  • 2 cups fresh spinach
  • 1 cup feta cheese, crumbled
  • 1 cup mozzarella cheese, shredded
  • 1 red onion, thinly sliced
  • 4 large tortillas
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Sauté the red onions until they are translucent.
  3. Add the spinach and cook until wilted.
  4. Layer the feta and mozzarella cheeses over the spinach and onion.
  5. Place a tortilla over the filling and cook until golden brown.
  6. Flip and cook until the other side is golden and the cheese is melted.
  7. Repeat with remaining tortillas and filling.
  8. Slice and serve warm.
