Ingredients

  • 2 cups fresh spinach
  • 1 cup crumbled feta cheese
  • 1 cup shredded mozzarella cheese
  • 1 medium red onion, thinly sliced
  • 4 large flour tortillas
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano

Instructions

  1. Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  2. Add the red onion and sauté until translucent.
  3. Add the spinach and cook until wilted.
  4. Remove the skillet from heat, and stir in feta and mozzarella cheese.
  5. Place a tortilla in the skillet, sprinkle half of the cheese mixture on half of the tortilla.
  6. Fold the tortilla over and cook until golden brown on both sides.
  7. Repeat with remaining tortillas and filling.
  8. Slice into wedges and serve warm.
