A delightful and creamy Mediterranean Lemon Chicken Soup that brings sunshine to your table.

Ingredients

  • 1 pound boneless, skinless chicken thighs
  • 6 cups chicken broth
  • 1 cup heavy cream
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 1 lemon, juiced and zested
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt to taste
  • Black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, sauté onion, carrots, and celery until softened.
  2. Add garlic and sauté for another minute.
  3. Add chicken thighs and chicken broth, bringing the mixture to a boil.
  4. Reduce heat and simmer until chicken is cooked through, about 20 minutes.
  5. Remove chicken, shred it, and return it to the pot.
  6. Stir in the heavy cream, lemon juice, and zest.
  7. Add oregano, thyme, salt, and pepper. Simmer for an additional 5 minutes.
  8. Serve hot, garnished with fresh parsley.

Notes

  • For a lighter version, substitute Greek yogurt for heavy cream.
  • This soup can be made ahead and stored in the refrigerator.
