- 1 pound boneless, skinless chicken thighs
- 6 cups chicken broth
- 1 cup heavy cream
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 medium carrots, diced
- 2 stalks celery, diced
- 1 lemon, juiced and zested
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt to taste
- Black pepper to taste
- Fresh parsley for garnish
- In a large pot, sauté onion, carrots, and celery until softened.
- Add garlic and sauté for another minute.
- Add chicken thighs and chicken broth, bringing the mixture to a boil.
- Reduce heat and simmer until chicken is cooked through, about 20 minutes.
- Remove chicken, shred it, and return it to the pot.
- Stir in the heavy cream, lemon juice, and zest.
- Add oregano, thyme, salt, and pepper. Simmer for an additional 5 minutes.
- Serve hot, garnished with fresh parsley.
