  • 2 pounds pork tenderloin
  • 1/4 cup maple syrup
  • 1/4 cup Dijon mustard
  • 2 tablespoons olive oil
  • 2 onions, sliced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix the maple syrup and Dijon mustard.
  3. Season the pork tenderloin with salt and pepper.
  4. In a skillet, heat olive oil over medium-high heat and brown the tenderloin on all sides.
  5. Add the caramelized onions to the skillet and then pour the maple mustard mixture over the pork.
  6. Transfer the skillet to the oven and roast for 25-30 minutes until the pork reaches an internal temperature of 145°F (63°C).
  7. Let it rest before slicing.
