A delightful combination of sweet apples and savory carrots roasted with a maple Dijon glaze.

  • 2 cups carrots, sliced
  • 1/4 cup maple syrup
  • 2 tablespoons Dijon mustard
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon thyme, dried

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine the apples and carrots.
  3. In a separate bowl, whisk together the maple syrup, Dijon mustard, olive oil, salt, black pepper, and thyme.
  4. Pour the maple mixture over the apples and carrots, tossing to coat well.
